“FLEX” AGING SYSTEM

General description:
“FLEX” is a system for aging cheeses. Size and power can be adapted to meet every customer's needs.
It is distinguished from classic aging by an innovative system that makes it suitable for aging any type of cheese.
The system guarantees excellent yield by perfectly controlling the temperature and humidity though the use of a new controller with dedicated software developed by our company in-house.

Air Treatment Unit:
The system is structured on a unique distribution of the individual elements inside the cold room.
In fact, it consists of:

  1. a series of air-treatment evaporators attached to the ceiling;
  2. air change circuits complete with extractor and grills attached to the ceiling;
  3. a series of anti-stratifiers attached to the wall;
  4. a semi-sealed motor condensing unit with delayed distribution.

Ventilation system:
The operating principle of the FLEX ventilation system is based on a specific air-circulation pattern obtained for the joint work of the Air Treatment Unit (A) and the stratifiers (B) located on the walls hit by the air jet.
The ATU blows air towards the side walls where the anti-stratifiers direct it downwards. The extraction force of the fans of the ATU draws the air through the carts, uniformly surrounding all the product.

Electronic control:
The control system consists of a power panel with a 4x20-character LCD “user terminal” and 15-button keypad.

By following the simple instructions provided by software developed by our company in-house, the user can control the system, setting the processing parameters (set-points and differentials) and all the other advanced functions (air change, pause-work, etc.)
