General description:
SSC is a system for salting Prosciutto ham. Its size and power can be adapted to meet any customer's needs.
The room's temperature and humidity are directly maintained by an electronic controller that guarantees that the salt dissolves correctly, allowing for excellent penetration into the product for the production of high-quality Prosciutto.
Air Treatment Unit:
This model has been specifically designed for the (dry) salting of Prosciutto ham and allows controlling the temperature and humidity of the room.
The system consists of a combination of cold generated by static evaporators and ventilated heat obtained from heaters fed by hot water from a boiler.
The semi-sealed condensing unit is located outside the room.
Ventilation system:
The operation of the ventilation system is based on a specific circulation pattern of hot air driven from above by heaters located on the side walls and cold air generated by the static evaporators located in the ceiling. The heaters are made entirely of stainless steel (which is of fundamental importance given the corrosive effect of the salt used in this type of processing).
Electronic control:
The control system consists of a power panel with a 4x20-character LCD “user terminal” and 15-button keypad.
By following the simple instructions provided by software developed by our company in-house, the user can control the system, setting the processing parameters (set-points and differentials) and all the other advanced functions (air change, pause-work, etc.) |
