General description:
RSC is a system for the static ripening of Prosciutto hams that can also be used for Coppa and Pancetta.
Size and power can be adapted to meet every customer's needs.
Once the product is salted, this system provides the ideal conditions for the correct loss of liquid mass.
The system guarantees excellent yield by perfectly controlling the temperature and humidity though the use of a new controller with dedicated software developed by our company in-house.
Air Treatment Unit:
This model, designed for use in Prosciutto ripening rooms, provides excellent control of the room’s temperature and humidity.
The system consists of a combination of cold generated by static evaporators and ventilated heat obtained from heaters fed by hot water from a boiler.
The semi-sealed condensing unit is located outside the room.
Ventilation system:
The operation of the ventilation system is based on a specific circulation pattern of hot air driven from above by heaters located on the side walls and cold air generated by the static evaporators located in the ceiling. The heaters are made entirely of stainless steel (which is of fundamental importance given the corrosive effect of the salt used in this type of processing).
Electronic control:
The control system consists of a power panel with a 4x20-character LCD “user terminal” and 15-button keypad.
By following the simple instructions provided by software developed by our company in-house, the user can control the system, setting the processing parameters (set-points and differentials) and all the other advanced functions (air change, pause-work, etc.) |
